I Changed My Mind with Dan Souza - Season 1

Host Dan Souza kicks things off with legendary TV star Padma Lakshmi. In this episode, Padma gets real about the twists, turns, and pivotal moments behind her rise to the top—while Dan puts his culinary know-how to the test with her ultimate nemesis: bitter melon. One divisive ingredient. Three dishes. No holding back. Can Dan change Padma Lakshmi’s mind? Recipes Mentioned: Bitter Melon Pickles Goya Champuru (Okinawan Bitter Melon Stir-Fry) Little Moon (Bitter Melon Cocktail)

Power couple Neil Patrick Harris and David Burtka join Dan in the kitchen to discuss their careers and family life, but there is one major obstacle: their shared visceral loathing of mayonnaise. Dan attempts to break down the science of emulsification to show them that mayo is more than just a "gloopy" condiment. He serves three elevated dishes where mayo is the secret structural star, hoping to flip the script for this duo.

Beloved actress and cook Valerie Bertinelli sits down with Dan to talk about her long career and her "hard resets" in life. However, Valerie is part of the population that thinks cilantro tastes like soap. Dan explains the genetic component behind this reaction and uses specific culinary techniques to neutralize the soapy aldehyde compounds. He presents three flavor-packed dishes in a final high-stakes attempt to change Valerie’s mind about the world's most controversial herb.
